1 Rack baby back or loin Ribs (allow 1 rack for every 2 people or 1 each if you're hungry)!! 2 oz light brown sugar 4 oz good bbq spice rub
1. Remove the membrane from the bone side of the ribs - leaving this on will result in chewy tough ribs!
2. Rub the light brown sugar onto both sides of the ribs and place in a bag or dish in the refrigerator overnight.
3. Start your Traeger on "medium" and pre-heat for 15 minutes, then switch to "smoke".
4. Place the ribs on grill and cook for 30 minutes, then swith your Traeger to "medium" and continue cooking for 1 - 2 hours, or until ribs are done. (you can check that they are done by picking up the ribs from the centre with tongs - if they are floppy but not do not break when gently lifted they are done)
5. Switch your Traeger to "smoke" for 30 minutes, brushing ribs with your favorite barbecue sauce.
6. Wrap ribs in foil and allow to sit for 15 minutes before cutting up and devouring!
